Italians have had a love affair with gelato for nearly a century. Over the past few years, gelato flavors and bases have been refined in order to express each gelato makers passion and artistry for their craft. In addition, the displaying of the final product has been elevated to an art form in itself. It is no surprise to see gelato mountains adorned with delicately sliced berries that are intricately arranged and then gently drizzled with flavorful sauce in display cases worldwide. Artisan gelato is first devoured by your eye, savored by your mouth and ultimately leaves your whole body feeling satisfied and refreshed.
Technically, what causes this gelato euphoria?
Gelato is denser, creamier, and more flavorful than traditional ice cream yet surprisingly it contains less fat. Gelato contains 5% to 8% butter fat while ice cream normally contains 18% butterfat. Also, gelato is frozen in different machines than ice cream, which reduces the amount of air that is whipped into the final product. This causes a much denser and creamier feeling in a consumers mouth. In addition, gelato is served at a higher temperature than ice cream which causes a velvety texture. The higher temperature allows your taste buds to experience much more of the natural flavoring. Ice cream on the other hand is highly processed, highly concentrated and uses artificially adjusted flavorings that must be added in order to cut through the fat content.
